| Everyone in Alaska has a couple of favorite fish recipes. This is one
of mine that everyone seem to like and enjoy.
Alaskan Fish Chowder:
2 pounds of Halibut (or some other solid white fish)
1/2 cup chopped onions, cut small
1/2 cup green pepper cut bite size
1/2 cup carrots cut bite size
1/2 cup celery cut bite size
1/2 cup potatoes cut bite size ( you can add more or less of the Carrots
and
Potatoes)
6 Tablespoons margarine or butter
3 cups chicken stock(you can use canned soup)
2/4 teaspoon salt
1/2 teaspoon black pepper (if you use white pepper use 1/8 teaspoon}
2 cups milk
3 tablespoons of flour.
2 & 1/2 cup sharp Cheddar cheese, grated or shredded
To prepare debone and skin fish, cut up into bite size pieces.
Cook in pot large enough to hold all the ingredients.
Sauté vegetable in 3 tablespoons of margarine or butter.
Add halibut or other white fish, chicken soup, salt and pepper.
Simmer covered, on low or medium for 5 minutes, do not let it burn.
Add milk and heat slowly do not burn milk and fish mixture.
Add the flour and remaining 3 tablespoons margarine or butter cook and
stir
until mixture thickens.
Add cheese, cook and stir over low heat until cheese melts. Serve with
side
of bread.
